- Asparagus
- Red pepper (yellow or orange would work as well)
- Bacon (or prosciutto )
- balsamic vinegar
- salt
- pepper
- optional:goat cheese
Directions:
- Wash and cut the asparagus
- Wash and cut the pepper into strips
- Make a "bundle" of 3-4 asparagus spears, 2 pepper slices and (optional) goat cheese
- Wrap a piece of bacon around the bundles
- Drizzle with balsamic vinegar
- Top with salt and pepper to taste
- Bake at 400 degrees for 30 minutes- turn over after the first 15 minutes.
